Just 12 minutes from Atalaya, in New Ibajay, our farm is an essential part of our vision to create a dining experience deeply connected to Palawan. There, we cultivate a diverse collection of specialty herbs, seasonal fruits, vegetables, and farm-fresh eggs.
The farm allows our culinary team to experiment with unique flavors, harvest ingredients at their peak, and bring a greater sense of seasonality to our menus. Together with produce from trusted local farmers and seafood sourced from the waters of Bacuit Bay, these ingredients form the foundation of our cuisine.
Led by Resident Executive Chef Bautista, Atalaya combines the natural abundance of Palawan with Mediterranean and Argentinian influences, creating dishes that are thoughtful, distinctive, and rooted in the place we call home.
